Ingredients
- 1 Ib lean ground meat (pork, beef, or turkey)
- 1 Tbsp olive oil
- 1 package of coleslaw mix
- 2 Tbsp rice wine vinegar
- 1 Tbsp low sodium soy sauce
- 1 Tbsp ground ginger
- 1 Tbsp chopped garlic
- 1 Tbsp Cayenne pepper (optional)
- Green onion chopped
- 1 cup brown rice (raw)

Instructions
- Boil 2 cups of water in a medium sized pot, meanwhile rinse and soak brown rice for 5 minutes then add to boiling water, lower temperature to medium and cover with lid, cook for about 20 minutes
- Heat skillet to medium- high, add 1 Tbsp olive oil, chopped garlic, and 1lb ground meat
- Season meat with ground ginger and cayenne pepper and cook until browned (about 8-10 minutes)
- Add coleslaw mix, soy sauce, and rice wine vinegar to skillet and stir until softened (about 5 minutes)
- Turn off heat and serve with ½ cup cooked brown rice
- Top with green onion and enjoy!
