Ingredients
- 4 oz chicken (breast or two thighs)
- 2 – 3 cups mixed vegetables: broccoli, bell peppers, water chestnuts, onions (frozen bags can make easier convenience if time is short)
- 2 tsp olive oil
- 2 Tbsp Coconut aminos or low-sodium soy sauce
- 1 tsp minced garlic
- 1 Tbsp peanuts
- ground ginger
- Mrs. Dash

Instructions
- Cut chicken into small cubes and season with Mrs. Dash
- Heat nonstick skillet at medium temperature and add 1 tsp olive oil
- Add chicken and cover with lid
- Cook 5-8 minutes until no longer pink in the middle
- Uncover and add mixed vegetables (if frozen cover again with lid to steam for 5 minutes)
- Add 1 tsp olive oil, coconut aminos, garlic, peanuts, and ground ginger
- Increase heat to medium-high and continue stirring until vegetables turn bright color (about 5 minutes)
- Let cool and enjoy!
