Ingredients
- 1 cup lentil pasta
- 6 oz cooked Chicken Breast
- 4 cups raw spinach
- ¼ cup sundried tomatoes
- 2 Tbsp pesto
- 2 Tbsp red wine vinegar
- 2 Tbsp Parmesan cheese
- Fresh basil

Instructions
- Boil water, add 1 cup lentil pasta, cook for 6-8 minutes
- Strain pasta and add to large bowl
- Toss cooked pasta with remaining ingredients: cooked chicken, spinach, pesto, sun dried tomatoes, red wine vinegar, and parmesan cheese
- Garnish with fresh basil
- Enjoy!
