Chicken Pesto Pasta
Enjoy pasta that’s naturally gluten free and high in fiber since it’s made from lentils! It can be served as a cold pasta to cool you off on a hot summer day. Or you can serve it hot to bring out all the flavors.
Instructions
  1. Boil water, add 1 cup lentil pasta, cook for 6-8 minutes
  2. Strain pasta and add to large bowl
  3. Toss cooked pasta with remaining ingredients: cooked chicken, spinach, pesto, sun dried tomatoes, red wine vinegar, and parmesan cheese
  4. Garnish with fresh basil
  5. Enjoy!
