Ingredients
- 1 Tbsp olive oil
- 1 lb chicken breast
- 8 oz fresh spinach
- 4 oz cherry tomato
- 2 oz red onion (cut into bite size pieces)
- 2 oz bleu cheese
- 4 oz cucumber (cut into bite size pieces)
- 4 Tbsp balsamic vinegar
- 1 Tbsp Mrs. Dash or 1 tsp garlic powder, 1 tsp onion powder, ½ tsp oregano, ½ tsp cayenne pepper

Instructions
- Cut chicken into ½ inch – 1 inch cubes and season with spice blend
- In medium skillet heat olive oil at medium temperature
- Add chicken and cover with lid so it steams for 10 minutes, stir occasionally
- Once chicken is fully cooked (no longer pink in the middle and juices run clear) remove from heat
- Combine spinach, tomato, onion, bleu cheese, cucumber in large bowl
- Add chicken and balsamic vinegar, toss until evenly distributed
- Serve and enjoy!
