Ingredients
- 1 lb lean ground turkey
- 6 pcs whole eggs
- 1/2 cup egg whites (or 4 egg whites)
- 1 cup thinly sliced potato
- 1 cup chopped zucchini
- 1 cup spinach
- 1/4 cup shredded pepper jack cheese
- 1 Tbsp olive oil
- black pepper
- garlic
- 1/4 cup chopped jalapeno optional

Instructions
- Preheat oven 375 degrees fahrenheit
- In a large skillet, heat 1 Tbsp olive oil, season Turkey with black pepper and garlic, cook until done, set aside
- Spray large baking dish with cooking spray
- Layer sliced potato evenly, then add zucchini, spinach, jalapenos, and top with cooked ground turkey
- Whisk eggs with egg whites then, season liberally with black pepper
- Pour egg mixture on top, then add cheese
- Bake for 40-45 minutes or until egg layer is cooked and slightly browning
- Slice into 6 pieces and enjoy!
