- Heat skillet with ½ Tbsp olive oil, minced garlic, and chicken breast, cook for 10-12 minutes or until reaches until the temperature of 165F, then set aside
- In a large bowl, combine mixed greens, chopped cilantro, sliced radishes, sliced onion, and mandarin orange pieces
- Mix ingredients for the orange vinaigrette and toss with salad mixture
- Top with sliced chicken breast, cashews, and avocado slices
